Asa foetida is a popular spice coming mainly from Iran and Afghanistan, much used in Indian cuisine. (Also called Hing). To my primitive taste buds its like curried carrot, but try it yourself! Commercially its harvested from the carrot like root by scraping just before flowering, then harvesting the dried exudate. Much used medicinally also.
